How to Properly Install EVO in an Outdoor Kitchen

🏡 Where Can the EVO Oven Be Installed?

EVO is designed for outdoor use and to integrate seamlessly into modern outdoor kitchens.

It can be installed in two main configurations:

Countertop installation: the oven is placed on a suitable, stable and heat-resistant work surface.
Installation on the dedicated EVO base: the oven is positioned on the specially designed Alfa Forni base, providing a complete and functional outdoor cooking station.

EVO can be integrated into modular outdoor kitchens, provided that the installation complies with all safety clearances and requirements specified in the user manual.

Important: EVO is intended for outdoor use only. It must not be installed in enclosed spaces or areas without adequate ventilation.

📏 What Safety Clearances Must Be Maintained?

To ensure safe operation, the following minimum clearances must be maintained when installing EVO:

Walls and other appliances	20 cm
Free space around the flue	50 cm
Free space above the oven	100 cm
Combustible materials	100 cm

These clearances must be taken into account when designing an outdoor kitchen, particularly where walls, overhead cabinets, roofs, pergolas or other structures are located near the oven.

Do not place flammable, combustible or heat-sensitive materials within the specified safety clearance areas.

🧱 What Type of Surface Can EVO Be Placed On?

The oven must be installed on a surface that meets the following requirements:

Stable and perfectly level, to ensure correct positioning.
Capable of supporting the oven's weight, which is 81 kg, as well as any additional loads expected during use.
Heat-resistant and non-combustible, to withstand the temperatures generated by the oven.
Adequately sized, to provide proper support for the product.

Before installation, make sure the supporting surface is suitable and free from deformation, instability or materials that are incompatible with high temperatures.

Do not install EVO directly on combustible or unsuitable surfaces.

🔧 What Does Outdoor Kitchen Ready Mean?

EVO has been developed around the Outdoor Kitchen Ready concept, making it easier to integrate into outdoor kitchens, countertops and modular kitchen units.

One of its key features is the possibility of choosing between two gas connection configurations:

Rear gas connection: provided as standard.
Bottom gas connection: available using the dedicated fitting included with the oven.

The bottom connection allows the gas hose to be routed more discreetly, which is particularly useful when EVO is installed as part of an outdoor kitchen.

Any modification to the gas connection must be carried out exclusively by qualified personnel, following the instructions provided in the user manual.

🌬️ What Ventilation Requirements Must Be Met?

EVO must only be used in adequately ventilated outdoor areas.

When installing the oven, it is important to:

Ensure proper air circulation around the oven.
Avoid configurations that could obstruct the evacuation of exhaust gases.
Never block the flue or any openings provided on the product.
Maintain the required safety clearances from walls, overhead structures and other outdoor kitchen components.

If the oven is installed within a configuration featuring modular units, side walls or overhead coverings, make sure the installation complies with all requirements specified in the user manual.

🔥 How Should the Flue Be Positioned?

The flue plays an essential role in the correct evacuation of exhaust gases and in heat management.

During installation:

Assemble the flue according to the instructions in the EVO user manual.
Maintain at least 50 cm of free space around the flue.
Do not obstruct the exhaust outlet.
Avoid installations that could interfere with proper draft.

Any extensions or modifications to the exhaust system must comply with the specifications and instructions provided in the user manual.

📌 Important: Do not use components or flue extension solutions that are not specified or verified for the EVO oven.

🛠️ Can EVO Be Installed on Its Dedicated Base?

Yes. EVO can be installed on the original Alfa Forni base, designed to provide a complete outdoor cooking station.

The base features:

Side shelves for food preparation and serving.
An integrated pizza peel holder.
Internal shelves and storage compartments.
A dedicated gas cylinder compartment.
Four swivel wheels, including two rear wheels equipped with brakes.

Before using the oven on its base, make sure the base has been correctly assembled, is positioned on a perfectly level and stable surface, and that the wheel brakes are engaged.

Do not move the base with the oven installed on top or while the oven is hot.

⚠️ What Should Be Checked Before First Use?

Before lighting EVO for the first time, check that:

The oven is correctly positioned on a stable, heat-resistant and non-combustible surface.
All required safety clearances are maintained.
The flue is correctly installed and free from obstructions.
The surrounding area is adequately ventilated.
No combustible materials are located nearby.
If gas is used, the connection has been installed and checked by qualified personnel in accordance with the user manual.

Do not use the oven if the installation shows any irregularities or does not comply with the required safety conditions.
