# How to Clean EVO and Carry Out Proper Maintenance

## Learn how to clean and maintain the Alfa Forni EVO oven, use pyrolytic cleaning, remove residues from the refractory cooking floor, protect stainless steel surfaces and inspect the gas burner to help keep your oven operating correctly over time.

### 🧹 How Do You Clean the EVO Oven Properly?

Regular cleaning of EVO is important to keep the cooking chamber, refractory cooking floor and other components in suitable condition for proper operation.

The user manual distinguishes between cleaning tasks to be performed after each use and periodic maintenance of surfaces and technical components.

The main tasks include:

- **Cooking chamber cleaning:** removing food and combustion residues.
- **Refractory cooking floor cleaning:** removing residues left on the cooking surface.
- **Exterior cleaning:** maintaining stainless steel and painted surfaces.
- **Gas burner maintenance:** removing deposits that may accumulate during use.
- **Burner nozzle inspection:** periodic cleaning to prevent blockages.

For organic residues inside the cooking chamber, EVO can also use **high-temperature pyrolytic cleaning**.

**Important:** Before performing any manual cleaning, switch off the oven, shut off the gas supply if applicable and wait until the oven has completely cooled down.

### 🔥 How Does EVO Pyrolytic Cleaning Work?

**Pyrolysis** is a cleaning process that uses very high temperatures to break down organic residues inside the cooking chamber.

The heat causes residues to carbonize, making them easier to remove afterward.

According to the EVO user manual, the recommended pyrolytic cleaning procedure is:

1. Bring the oven to **500°C**.
2. **Maintain this temperature for 2–3 minutes**, as specified in the manual.
3. Complete the cycle and switch off the oven.
4. Wait until the oven has completely cooled down.
5. Remove any remaining residues from the cooking floor using a suitable brush.

Pyrolysis helps break down organic residues produced during cooking, but it does not replace all regular maintenance procedures.

**Warning:** 500°C is also EVO's maximum operating temperature. Do not exceed this limit during cleaning.

Never attempt to remove residues manually while the oven is still hot.

### 🧱 How Do You Clean EVO's Refractory Cooking Stones?

EVO's cooking floor consists of **3 cm thick Alfa refractory cooking stones**.

During use, flour, dough, toppings and other food residues may accumulate on the surface.

The user manual recommends cleaning the cooking floor before and after every use.

**Cleaning procedure:**

1. If necessary, carry out pyrolytic cleaning according to the user manual.
2. **Wait until the oven and refractory cooking floor have completely cooled down.**
3. Use a suitable brush to remove any remaining residues from the surface.
4. Gently wipe the cooking floor with a **damp cloth**, as specified in the manual.
5. Before using the oven again, check that no cleaning residues remain.

Cleaning must be carried out carefully to avoid damaging the refractory stones.

📌 **Important:** Do not pour water onto the cooking floor while it is hot, and do not use aggressive tools that could damage its surface.

The refractory stones should also be cleaned carefully after wood-fired cooking.

### 🧽 How Do You Clean EVO's Exterior and Stainless Steel Surfaces?

EVO uses stainless steel components, including elements exposed to cooking chamber temperatures and outdoor environmental conditions.

To keep the surfaces clean, the Alfa Forni user manual recommends:

- **A soft, non-abrasive cloth.**
- **A solution of water and soap.**
- Alternatively, a mixture of **baking soda and dishwashing detergent**, according to the manual.
- For stainless steel components, a **dedicated stainless steel cleaner** compatible with the surface.

**Recommended procedure:**

1. Make sure the oven has completely cooled down.
2. Gently remove surface dirt using a soft cloth.
3. Apply a cleaning product suitable for the material.
4. Wipe gently without using abrasive tools.
5. Rinse the treated surfaces thoroughly, following the cleaning product's instructions.
6. Dry with a soft cloth.

The manual recommends cleaning the exterior and stainless steel components **weekly**.

**Warning:** Do not use cleaning products containing acids, turpentine or xylene.

Before using any dedicated cleaning product, always read the instructions and warnings on its packaging.

### ✨ How Do You Protect EVO's Stainless Steel Against Corrosion?

Stainless steel is designed to withstand environmental conditions, but proper maintenance is important to preserve its properties over time.

The EVO user manual recommends **periodic protection of stainless steel components**.

The recommended products include:

- **Mineral oil (liquid paraffin).**
- **Neutral cleaning solutions with a pH of 7**, free from acids, mineral spirits or xylene.

Apply the product using a soft, non-abrasive cloth, only when the oven is completely cool.

The maintenance schedule recommends protecting stainless steel **monthly**.

📌 **Important:** Only use products compatible with the surfaces being treated and follow their instructions. Do not apply protective products to hot surfaces or components intended for direct food contact unless the product is explicitly suitable for that purpose.

### 🌊 How Should You Clean EVO When It Is Used Near the Sea?

Prolonged exposure to salt air can contribute to corrosion on metal surfaces.

For ovens installed near the sea, the user manual recommends particularly careful maintenance.

Specifically, it advises **frequent cleaning with fresh water** to remove salt deposits.

It is important to:

- Clean exterior surfaces regularly when the oven is cool.
- Use soft materials that will not damage the finish.
- Prevent salt deposits from accumulating over time.
- Periodically check the condition of stainless steel surfaces.

If small rust spots appear, the manual recommends using a **dedicated rust-removal product** compatible with the material.

To avoid damaging the finish, contact Alfa Forni customer support if you are unsure which product to use.

### 🔥 How Do You Clean EVO's Gas Burner?

The EVO burner must be cleaned periodically to prevent the accumulation of cooking residues and other deposits.

The manual specifies **monthly** burner maintenance and recommends especially thorough cleaning after:

- Intensive oven use.
- Hybrid operation, particularly after wood-fired cooking.
- Extended periods of inactivity.

To remove accessible residues, the manual recommends using:

- **A vacuum cleaner** to remove deposits.
- **A soft brush** to help loosen and remove dirt.

The user manual also describes how to remove the burner for more thorough cleaning, using a dedicated removal and reinstallation procedure.

**Warning:** Removing the burner involves handling gas system components, the ignition electrode and gas connections. If you do not have the necessary technical expertise, contact qualified personnel.

Do not use unsuitable tools or cleaning products to remove carbon deposits, as these could damage the burner.

### 🔩 How Do You Remove the EVO Burner for Thorough Cleaning?

The EVO user manual includes two dedicated sections:

- **Gas burner removal**, with 12 illustrated steps.
- **Gas burner reinstallation**, with another 12 illustrated steps.

These procedures involve several components, including the gas control knob, mounting panels, pilot assembly, ignition electrode and gas connection.

Because these operations involve essential gas system components, burner removal must never be improvised.

In particular:

1. The oven must be completely cool before any work is carried out.
2. The gas supply must be shut off.
3. All operations must strictly follow the illustrated instructions in the user manual.
4. After reinstallation, **all gas connections must be checked for leaks using a suitable leak-detection product**.
5. **Never use an open flame to check for gas leaks.**

If a leak is detected, immediately shut off the gas supply and do not use the oven until the issue has been resolved.

For burner removal, reinstallation and inspection, assistance from qualified personnel is recommended.

### 🔧 How Often Should the Gas Burner Nozzles Be Cleaned?

The EVO user manual states that the **burner nozzles must be cleaned at least once a year**.

Periodic cleaning helps prevent blockages that could restrict gas flow and affect burner operation.

Because this procedure requires removing the burner, it is important to follow the instructions provided in the user manual.

**If you are unsure how to proceed, contact qualified personnel.**

Do not attempt to modify the nozzles or use unsuitable tools that could damage them or alter their characteristics.

### 🪵 How Do You Clean EVO After Wood-Fired Cooking?

EVO can operate with either gas or wood thanks to its Hybrid configuration.

After a wood-fired cooking session, it is important to pay particular attention to combustion residues and the cleanliness of the gas system.

**After using wood:**

1. Wait until the oven has completely cooled down and there are no active embers remaining.
2. Remove combustion residues from the cooking chamber.
3. Clean the refractory cooking floor according to the user manual.
4. Check that no residues remain around the burner area.
5. If you intend to return to gas operation, make sure the burner is clean and the burner cover has been removed.

The EVO user manual recommends **thorough burner cleaning after using the Hybrid system**.

📌 **Important:** The burner cover protects the gas system during wood-fired operation, but it does not eliminate the need to inspect and clean the burner periodically.

### 📱 How Should You Protect and Store the EVO Digital Thermometer?

The EVO digital thermometer is a removable electronic device secured to the oven by magnets.

To help maintain proper operation, the user manual recommends:

- **Do not leave the thermometer exposed to rain.**
- **Avoid exposing the device to moisture.**
- **Remove the thermometer from its housing when it is not in use.**
- **Store it in a dry place.**

If the thermometer will not be used for an extended period, **remove its four 1.5 V batteries** to prevent possible electrolyte leakage.

Before removing the device, make sure the surrounding oven surfaces are not hot.

Do not use aggressive cleaning products or methods that could damage the electronic components.

### 📅 What Is the Recommended EVO Maintenance Schedule?

The EVO user manual provides a maintenance schedule distinguishing between regular cleaning and periodic maintenance.
